healthy Chicken Burger Details – 4 Burgers Prep Time: 20 Minutes Cook Time: 20 Minutes

Lunch is meant to be enjoyed and if you are wanting the same results of eating a chicken salad but the enjoyment factor of take away Thai and burgers, these healthy chicken burgers have you covered. You can prepare these healthy Thai chicken burgers in advance and store them in fridge for 3 days.

Fast, easy and tasty


400g chicken breast mince

60g quinoa flakes

1 clove garlic, crushed

1 tsp fresh ginger

1 fresh chilli finely diced

1 tsp lime rind

1/2 bunch of coriander finely chopped

2 tsp fysh coconut amino

1 egg

¼ red capsicum finely diced

¼ yellow capsicum finely diced

1/4 ribboned carrot

1/4 ribboned cucumber

Fresh herbs – coriander, basil, mint

Spanish onion

Mixed leaves

2 tbs sweet chilli sauce – use the good sauce

Lettuce leaves (to wrap as the bun)


Combine mince, quinoa flakes, garlic, ginger, chilli, rind, fysh sauce, eggs and coriander in a medium bowl. Shape mixture into 4 patties, gently pressing each one into a 2cm thick pattie. They will feel wet. Add more flakes if mixture is too sloppy.

Heat fry pan and cook patties until well cook, turning over once

Using a zoodler or peeler cut cucumber, carrots into long ribbons and place in bowl, add capsicum, onion and fresh herb mix. Squeeze a generous amount of lime juice over salad and set aside

Pull lettuce leaf to create a cup.  Top with chicken pattie, drizzle sweet chilli sauce and add cucumber carrot mix on top

Eat and enjoy with a green smoothie
